kali-linux-default depends on legion, which does replace Sparta , which does show up here in the menu as sparta- If you click the menu icon and start typing in legion, does the Sparta icon show up? If you're still having issues though, this is better suited for the forums and not the bug tracker.

No, Sparta does not show up after typing in "legion". Sparta/Legion disappeared a few weeks ago FOLLOWING 'apt-get update && apt-get upgrade && apt-get dist-upgrade' (in which I do on a daily basis). I tested on my 'dualboot' (root), usb/persistence 'kalilive' (root), and usb/persistence 'kalilive' (user). ALL fail to SHOW+see Sparta/Legion FOLLOWING update/upgrade/dist-upgrade.

I just fixed an issue in kali-menu:
you will find legion in kali-menu version 2020.1.8 (in 01-info-gathering and 02-vulnerability-analysis).

legion is automatically installed with different metapackages but I don't know if you installed them.
You can check if legion is installed with 'dpkg -s legion'
